Thanks for the report. This looks like the issue we already have confirmed and marked Planned: Theme color changes to 'automatic' when changing background image. A manually picked theme color falls back to "automatic" there as soon as the wallpaper changes, which also happens when an app or a scheduled routine swaps the wallpaper in the background without you touching it.
Does that match what you see: does the color flip right after your wallpaper changed? If so, upvote that post to get the status updates. If your wallpaper never changes and the color still switches on its own, that is new information for us, so please add it here in the thread.
